SWEET CILANTRO DRESSING

2 tablespoons extra-virgin olive oil

¼ cup water

¼ ripe Hass avocado

2 tablespoons raw apple cider vinegar

1 tablespoon freshly squeezed lime juice

2 tablespoons raw honey

½ cup tightly packed fresh cilantro

1 tablespoon seeded minced jalapeño chile

1 teaspoon minced fresh ginger

1 teaspoon coconut oil

½ red onion, chopped

1 red bell pepper, chopped

1 ripe Hass avocado

1½ cups cooked black beans (see this page) or 1 (15-ounce) can, rinsed and drained

2 green onions, white and green parts, chopped

½ teaspoon sea salt

1 tablespoon freshly squeezed lime juice

1 head of butter lettuce, for serving
